ChocolateWith the summer behind us it's time to give you an update on our latest productions.

We are almost ready with a great DVD and download of a show on "Chocolate" presented by the well-known American Pastry Chef En-Ming Hsu. The one-hour program has great recipes on Chocolate Puff Pastry, the famous Chocolate Macarons, the beautiful Chocolate Sable tart, just name a few.

I met En-Ming in 2001 when we produced the documentary on the Coupe du Monde de la Pâtisserie in Lyon, France for the Food Network. She was captain of the USA team that won GOLD in this prestigious competition. We stayed in touch over the years when we filmed other competitions in France and always talked about creating a program on chocolate products that people could make at home. This DVD will be ready the end of October.

En-Ming Hsu PortraitWe are also following the Junior Culinary Team Canada to the World Culinary Olympics. Each month we give an update on the team's progress and how they are working towards their goal of creating a two-course meal for 120 people in Erfurt, Germany in October 2012. The appetizer has to be a vegetarian, which might be a nice challenge. It's a great opportunity for these young students of the Vancouver Community College (VCC), not only to represent Canada at this competition, but also experience traveling through Canada on a variety of fundraisers. In July they had the great opportunity to cook for The Duchess and Duke of Cambridge William and Kate, while they were in Canada and visit in Ottawa. We, at DV Cuisine are always happy to help great chefs with their promotion. One of our favourite restaurants on Vancouver Island is Amusé Bistro with owners Bradford Boisvert and his wife Leah.
